Ingredients:
- 350 grams of cooked chestnuts
- 500 milliliters milk (or water)
- 15-30 grams sugar
- 1/2 vanilla bean (scraped seeds and pod)
Instructions:
1. In a medium saucepan, whisk together the milk and sugar over medium heat until the sugar dissolves.
2. Add the cooked chestnuts and vanilla bean, bringing the mixture to a low simmer.
3. Let simmer for 20 minutes, stirring occasionally, until about 125-150 milliliters of liquid remains.
4. Remove the vanilla pod, then transfer the chestnuts to a food processor.
5. Blend until smooth, adding some of the cooking liquid as needed for the desired consistency.
