Crispy marzipan brownies: the perfect snack for chilly days

Crispy brownies with molten marzipan are the perfect dessert for cold and rainy days. These sweet treats will quickly become your favourite snack, and they’re ideal for serving with coffee or tea.


To make them, you’ll need 180g unsalted butter, 200g dark chocolate (at least 70% cocoa), 100g marzipan, 300g golden caster sugar, 3 medium eggs, 25g flaked almonds, and butter for greasing.


Here are the steps to prepare this delicious snack:


  • Grease and line a baking tin with parchment paper, or line the air fryer basket with parchment. Preheat the air fryer to 120°C.

  • Place the butter and chocolate in a heatproof bowl and cook for 5 minutes, stirring until melted and combined. Let the mixture cool.

  • In the meantime, roll small marzipan balls, about 1-2 cm in size.

  • Stir the sugar into the cooled chocolate mixture, then add the flour, eggs, and a pinch of salt.

  • Pour half of the mixture into the prepared tin, scatter the marzipan balls over it, and pour the remaining mixture on top. Sprinkle the flaked almonds on top.

  • Increase the air fryer temperature to 160°C and bake the brownies for 30-38 minutes, until set on top but still slightly wobbly in the middle.

  • Let the brownies cool on a rack, then carefully lift them out of the tin and cut them into squares.
